What I’m looking for and what I’m really craving is just appetizers and snacks that are fresh and easy to make and more importantly, healthy! If I really was honest with myself, I would tell you that I much prefer grazing on a variety of healthy snacks versus having just a big meal.
What is really awesome too is making a batch of stuff in the beginning of the week and snacking on it all week. Some foods like this bruschetta recipe taste even better the second day.
All of you who want to throw the most delicious party for NYE with all kinds of happy in your tummy too- Try This! It goes really well with some multigrain chips. I love the brand called “Food Should Taste Good!” (It really should!)
Spicy Balsamic Bruschetta Dip
Typically a preplated tomato bite loaded on french bread, my version is just for dipping and contains a bit of spice with a chopped jalepeno. Enjoy cold with some multigrain chips for a lighter version.
- 8 each roma tomatoes small diced, seeds removed
- 1/3 cup chopped fresh basil please use fresh herbs
- 1 each fresh jalepeno small diced, seeds removed and discarded
- 1/4 cup shredded parmesan cheese
- 2 tsp olive oil
- 2 cloves garlic minced
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 Tbsp balsamic glaze (or plain balsamic vinegar) try to get the glaze for best flavor
- 1/4 cup red onion small diced, optional
- 4 cups multigrain chips
Start by deseeding and chopping the tomatoes, jalepeno and garlic and optional red onion. Add to a medium size bowl.
Add the parmesan, olive oil, salt and pepper, stir to combine.
Mix in the balsamic glaze. Drain any excess water or liquid and scoop into a serving bowl. Serve chips on the side.
