This recipe is a no bake oatmeal & nut butter bites. that contains honey and dried fruit.
In a medium sized mixing bowl, pour in the oats, raisins, flax seed, craisins, chocolate chips, salt, pumpkin pie spice and sunflower seeds together for 10 seconds to blend with a spoon.
To the oat mixture, add in the honey, vanilla extract and peanut butter and with clean fingers or a spatula mix together until all ingredients are covered with the peanut butter and everything is blended. I found that a little cooking spray sprayed on my measuring cup helps the peanut butter to come out of the measuring cup. Likewise a little cooking spray on your stirring spoon or spatula will help the peanut butter not to stick as much and blend better into the oatmeal.
When all of the oats are coated with the honey and peanut butter and the mixture is blended together well, chill the mixture for 30 minutes in the refrigerator. This is a necessary step. This needs to happen BEFORE you roll the mixture into the bites.
Lay out a plate or a sheet pan or a cake pan that you can lay out the snack bites on while you roll them out. After the oat mixture is chilled, roll out the bites into small soup spoon sized balls and lay them out on the plate or pan. Try to keep them separate so they aren't touching so they don't stick together.
Chill the snack bite balls for another 30 minutes and then enjoy. This is a necessary step to really firm everything together and to let all the flavors blend together.
These are easy to store in a ziplock bag or tupperware if you follow the chill steps. Keep refrigerated for best flavor. Enjoy!
