A small drop cookie that is a perfect little seasonal bite.
Preheat an oven to 350°F.
Line a large baking sheet with foil or parchment paper. Spray with non stick cooking spray.
In a medium size mixing bowl, cream together the sugars and butter with a hand mixer.
Add the egg and mix again for 10 seconds to incorporate.
Add in the vanilla extract and pumpkin puree and give the whole mixture a few stirs with a spoon to incorporate.
In a second bowl, mix the flour, salt, cinnamon, pumpkin pie spice, baking soda and oats. Stir with a spoon for 15 seconds to combine.
In batches, mix the dry ingredients into the wet ingredients stirring in between additions. Do not over mix. You want to just make sure everything is incorporated.
With a large spoon or a medium sized (about 2oz) scoop, scoop the batter and drop onto the baking sheet. Use the back of the spoon to flatten the cookie just a little bit.
Bake for 12 minutes and cool completely before eating. Enjoy!
