A Berry Good Day Wrap

I had sinus surgery this week and I’m still in recovery mode but the ambition to create and the need to show more patriotism by sharing red, white and blue foods with my loved ones beckoned me.  I have a lot of love for our soldiers and love a day where we honor them in the past, present and future.  I truly believe this country is the home of the free because of the brave. My prayer for this holiday and for the future is that we can stand on that bravery in the face of fear and do better at uniting. Celebrating our differences and honoring our country as the truly amazing place it is.

I purchased a few packages of sugar cookie mix today and had fun dyeing them red and blue and then designing cookies to share. 

 

 

 

 

 

 

 

Additionally, I created this berry good chicken salad wrap to share today that was a hit. I mixed shredded chicken breast with some plain yogurt, a few drops of buffalo sauce and some strawberries and blueberries.

I then wrapped them in a soft tortilla. Some of them got a few sprigs of spring mix lettuce.  I love the  combination of the sweetness of the berries and the creaminess of the yogurt along with a tinge of spice from the buffalo sauce. ( I recently found out Frank’s comes in a shake on powdered spice blend too! )  I think these ingredients made a unique wrap. May I point out one more thing about these wraps? They have the holiday color coordination we love this season. It’s not cheesy to celebrate this way. It’s really great. The weather is really heating up on the west coast and I LOVE foods like this that don’t require me to cook anything on the fly.

I find it important to have some no bake (or cook) recipes like this on hand in the summer. When the sun goes down or before the heat of the day really warms up on your house is the best time is to pre make items like proteins or noodles for a salad the next day. This is why grilling is so popular. You will be cooking outside instead of heating up your house. It’s a good way to make friends with your neighbors too. You know that your grilling smells are making their bellies grumble too.  I remember catering a party last year in June.  After grilling for an hour, it became difficult to be next to that warm grill in the sun. Of course this is the exception of grill time, but I’m making the point that it can be awesome to have food that is ready to go without a lot of hassle sometimes.

Berry Good Wraps

A sweet and creamy buffalo chicken wrap.

Ingredients

  • 4 each 10" or 12" flour tortillas
  • 2 each cooked chicken breasts shredded
  • 1 cup plain yogurt
  • 2 tsp buffalo sauce
  • 1/2 tsp kosher salt
  • 1/2 cup blueberries
  • 1/2 cup strawberries
  • 2 cups lettuce optional

Instructions

  1. In a small bowl, mix shredded chicken, salt, buffalo sauce and yogurt. Stir well to combine ingredients. 

  2. Lay out a large tortilla and fill with 1/2 cup chicken mixture and  approx. 1/3 cup blueberries and 1/3 cup strawberries in the middle. Optional sprinkle of lettuce. 

  3. Fold each side in towards the middle of the tortilla about 1/3 of the way and fold the bottom part of the tortilla over the middle. Next roll the tortilla over itself to continue the fold. After the tortilla is rolled up, cut it in half on a bias with a serrated knife. Enjoy!
